辣椒干又名牛角椒，宁化名产。它以色泽鲜红、透明、皮薄、味香、油质多、辣味适中六大特色而驰名中外，畅销港澳、新西兰、马来西亚等国家和地区。

　　辣椒约在明朝末年传入我国，广为栽培，在我国作为一年生植物栽培。在云南也有多年生的木本"辣椒树"。辣椒经干燥加工后，即得商品辣椒干。辣椒干和辣椒制品作为调味品一直是国际贸易的大宗商品。
